600 g pointed cabbage, cut into fine strips or grated
200 g carrots, sliced
200 g onions, cut into fine strips
150 g leek, cut into rings

1 tsp pepper
1 tsp sugar
250 g flour
3 tbsp breadcrumbs
3 tbsp cornstarch
1.5 tsp baking powder
360ml water
Caraway seeds
3 tbsp cooking oil
Herb quark:
250 g quark
0.5 tsp salt
0.5 tsp pepper
1 tbsp grainy mustard
0.5 tsp sugar
10 g parsley, chopped

Preparation is so easy:
For the winter vegetable pancake:
In a large bowl, thoroughly mix the pointed cabbage, carrots, onions, leeks, salt, pepper, sugar, flour, breadcrumbs, cornstarch, baking powder and water.
Add a little caraway seeds to taste.
Set aside and let rest at room temperature for ten minutes.
For the herb quark:
Meanwhile, in another bowl, mix the quark, salt, pepper, grainy mustard, sugar and parsley.
Heat cooking oil in a pan.
After the resting time, spread the pancake mixture evenly over the entire bottom surface of the pan.
Fry on all sides over medium heat for about ten minutes.
Cut winter vegetable pancakes into pieces and serve with herb quark.
