Do you love Baumkuchen but can't get around to buying one?
No problem, just bake Baumkuchen yourself!
The recipe shows you how to do it step by step.
For many,
Baumkuchen is
part of the
Advent season
, such as baking cookies * and Christmas decorations.
The main production areas are in Dresden, Cottbus and Salzwedel in Germany.
“
Salzwedeler Baumkuchen
” even has the EU quality mark “Protected Geographical Indication”.
You can usually get it at Christmas markets - which is a bit difficult in this extraordinary year, as most of the
Christmas
markets cannot take place.
So instead of buying a cake online or in the supermarket or foregoing the delicacy,
just bake your tree cake yourself this year
.
How do you make Baumkuchen?
For Baumkuchen, the
dough is baked
or grilled
layer by layer
.
Traditionally, the dough is baked on a rotating skewer, the so-called
roller
, over an open flame.
To do this, the dough is applied in ten to 20 individual layers and baked in layers.
This creates
the typical rings when cutting
, which resemble the annual rings of a tree.
Since very few people have a grill skewer at home, you can also bake your tree cake in the oven.
However, an important requirement is an
oven with a grill function
.

Recipe for Baumkuchen: How to bake the classic yourself
First, separate the
eggs
.
First mix the melted
butter
with
flour
and
marzipan
in a bowl
using a hand mixer.
(If the butter is still hot, the marzipan is easier to process.)
Enter
powdered sugar
,
starch
and
egg yolks
and circulate all good.
Now add the
vanilla sugar
,
baking powder
and the zest and some juice from the
orange
, stir everything in again.
The result is a smooth, tough dough.
Now you need to rinse the stirring rods of the hand mixer well, because next you beat the
egg whites
until foamy.
To
do this, add the
sugar
to the beaten egg whites and keep beating.
Carefully fold the finished egg whites under the dough.
Heat
the oven to
250 ° C with the grill function
.
Grease the springform pan with
butter or oil
and add a first thin layer of batter so that the base is covered.
Put the mold in the oven for a few minutes.
Make sure you stop there and make sure that the dough doesn't get too dark.
Take the mold out of the oven and pour the next thin layer of dough over it, which you bake in the oven for a few minutes.
The layers are allowed to turn nice and brown, so that the typical marbling (the "tree layers") will later emerge.
Work like this, layer by layer, until the batter is used up.
Then distribute the
apricot jam
evenly on the top of the cake, which is still warm, and let it cool down.
Melt the
couverture
together with the
palmin
in a small saucepan or in a water bath
.
Pour the liquid couverture over the Baumkuchen and let the glaze set.

Instead of the
dark chocolate couverture
, you can of course cover the finished Baumkuchen with another topping to suit your taste, such as white chocolate or a
frosting
that you can easily make from powdered sugar and lemon juice.
Homemade tree cake with glaze
lasts about
a week
.
You should keep it in the
refrigerator
.
