Ince Yanai's recipe for a tanned chicken with white wine, garlic and thyme roasted in the oven with apricot halves and purple onions.
After a whole night the chicken absorbs the flavors of the batter and the fruit it remains soft and juicy especially after grilling.
We recommend serving it in the center of the table alongside couscous or rice that will soak up any of the wonderful sauce left at the bottom of the pan.
