Fresh green beans are a real treasure to me and now is the season to find particularly beautiful pods.

Last time I added it to a pot of meatballs in tomato sauce, but this time it is the star.



I rinse the pods lightly in boiling water and transfer them straight to the water with ice in order to stop the cooking and leave it a little crispy.

Together with roasted almonds, garlic, lemon and hot pepper, you get a fresh and wonderful dish, which I really like to serve as a side dish between all the dishes and carbohydrates, and even just as a snack.

Ingredients

    • 500 grams of green beans (recommended fresh, but you can also use frozen)

    • 1 cup whole or halved blanched almonds

    • 10-12 garlic cloves, peeled and halved

    • ¼ cup olive oil

    • 1 tablespoon coarse salt

    • 1 teaspoon ground black pepper

    • ½ lemon squeezed for juice

Preparation

How do you make green beans with almonds and garlic?

  • 1 If using fresh green beans, wash well and remove the sting from each pod.

  • 2 Fill a pot with plenty of water and bring to a boil.

    Prepare a bowl with ice water next to it (cold water with ice cubes).

    Blanch the green beans in the boiling water for about 4 minutes, filter, transfer directly to cool in ice water and filter again.



    *If you use ready-made frozen beans, there is no need to cook, just thaw.

  • 3 Heat a deep pan like a wok and pour a quarter of a cup of oil.

    Add the almonds and fry while stirring until golden -

    caution!

    We don't want the almonds to burn and become bitter.

  • 4 Add the garlic and fry together for another 2 minutes.

  • 5 Add the green beans, lemon juice and spices to the pan, mix and sauté everything together for about 3 minutes and transfer straight to a serving plate.

  • 6 Sprinkle slices of hot green pepper and a little sesame and serve.
