Method of preparation
How do you make mussar fillet with roasted vegetables?
1Preheat oven to 200 degrees Celsius. Place the vegetables on a baking sheet lined with baking paper in one layer, season with salt and pepper and drizzle generously over olive oil. Put the pan with the vegetables in the oven and roast for 15-18 minutes, until the peppers and zucchini soften and begin to golden slightly at the edges.
2Remove pan from oven carefully. With the help of a paper towel, dry the fish well and place them over the vegetables with the side of the skin down. Season the fish with olive oil, salt and ground black pepper and return to the oven for another 12-14 minutes, until the fish is roasted.
3Take out, decorate with chopped mint and serve immediately.
Tip: You can add lemon quarters to baking with the fish.
