These are the ingredients you need for a moist gingerbread:

  • 250 g butter, softened
  • 250 g sugar
  • 4 eggs
  • 200 g flour, sifted
  • 3 tsp baking powder, sifted
  • 3 tbsp baking cocoa
  • 2 tbsp gingerbread spice
  • 1 pinch of salt
  • 250 ml milk
  • 3 tbsp honey
  • 100 g ground hazelnuts
  • 100 g almonds, chopped
  • 300 g couverture, melted
  • 40 g nuts (e.g. hazelnuts or almonds), chopped

This is how easy it is to prepare:

  • Preheat the oven to 160°C fan.
  • In a large bowl, whisk together butter and sugar, stir in eggs one at a time.
  • Mix dry ingredients, except for the chopped nuts, briefly in a separate bowl and add to the butter-egg mix alternately with milk and honey. Stir until a homogeneous dough is formed. Finally, fold in chopped nuts.
  • Place the dough in a deep baking tray lined with baking paper and smooth it out.
  • Bake for 25 minutes.
  • Spread the couverture on the finished gingerbread and sprinkle with nuts.
  • The fresh gingerbread tastes especially good warm!
