Kneading, folding, turning: the art of puff pastry crafting

  • Sift the flour into a large bowl and add the salt.

Cut the cold butter into small cubes and then add them to the bowl as well.

Knead the baking mixture until it is coarsely crumbly.

  • Then add the cold water and knead the dough again so that it becomes nice and smooth.

Then form the puff pastry into a rectangle, which you roll out about one centimeter thick on a floured work surface and cut into three equal parts.

Fold the two outer pieces towards the middle so that the two layers of dough overlap in the middle.

  • Turn the piece of dough 90 degrees and roll it out again into a rectangle, which you again cut into three parts and fold towards the middle.

  • Wrap the dough in cling film and let it rest in the fridge for half an hour.

  • After the cooling time has elapsed, cut the dough back into three equal parts, fold the two outer ones towards the middle again, turn the piece of dough 90 degrees again and roll it out again into a rectangle.

Then cut it into three parts again and fold it towards the middle.

Then repeat this process one last time, making a total of six layers.

This is called touring and is responsible for the typical puff pastry consistency.

  • It's not just easy to make puff pastry yourself using a basic recipe, you can also bake yeast dough, sourdough, sponge dough and shortcrust pastry easily and in the classic way.
