2023-05-09T11:37:32.912Z

Highlights: Parmesan is made from raw milk, rennet and salt. Animal rennet is the enzyme that comes from the fourth gastric mucosa of calves, goats or lambs. cows for Parmesan are fed silage-free, i.e. without fermentation feed. The original Parmesan is called Parmigiano-Reggiano. It is protected by origin according to the DOP seal and may only be produced in the Italian provinces of Parma, Reggio Emilia, Modena, Bologna and Mantua.

Did you know that Parmesan is not vegetarian at all? After all, animals die during production.

Do you like to eat a vegetarian diet at least from time to time because, among other things, animal welfare is close to your heart? Then you should avoid Parmesan in vegetarian and, of course, vegan dishes in the future. Because how cruel the production of the popular cheese is is shocking.

Nowadays, it's easier than ever to eat without animal products – for example, with recipes such as creamy asparagus and broccoli soup, meat-free roast beef with fried potatoes and wild garlic remoulade, and rhubarb compote for dessert. In most cases, however, you can simply replace the Parmesan with other cheeses.

  • According to the Maggi.de report, the cows for Parmesan are fed silage-free, i.e. without fermentation feed, no preservatives or other artificial additives may be used for its dough and the cheese, which consists of the three ingredients raw milk, rennet and salt, lasts up to six years.
  • Animal rennet is the enzyme that comes from the fourth gastric mucosa of calves, goats or lambs, as reported by the New York Post (NYP). The report also shows that the animals are usually killed in the production of Parmesan.
  • According to the NYP, the rennet is extracted, dried and, after solidifying, rehydrated in water. The resulting liquid is added to the milk, which is stirred to make cheese. The rennet is intended to help separate the solid particles in the milk from the water content. THIS is how a solid mass is formed and a curd can form.
  • "Never again cheese": The revelation about the production of Parmesan causes horror on Facebook

Facebook users were shocked by NYP's article, writing comments such as "Horrific! Why do we, as a species, still eat babies?" or "I just can't take it anymore... It's killing me." Another user commented in surprise: "Wow, I had never heard that before! Dairy products are really scary." Whereas another commentator is certain: "This is really disgusting. I never want to eat cheese again in my life." What's your take on that?

    Alternative: Microbial Lab

Microbial rennet is an enzyme preparation that is an alternative to traditional animal rennet. Thus, it is a vegetarian and vegan option, as it is free of animal products. Pay attention to the declaration on the cheese packaging: Some manufacturers voluntarily provide information about which rennet they use.
