But now some delicacies are back on the table that you had to wait a few months for, such as plum cake, hearty stews or pumpkin recipes.

So make yourself comfortable at home and cook a delicious chilli "sin carne" (German: without meat) - in this case with the best autumn vegetables.

Vegetarians also get their money's worth and you can really celebrate autumn.

A delicious sour cream dip or flatbread or a few slices of baguette go well with it.

Pumpkin Chili Recipe: What Ingredients Do You Need?

  • 2 red onions

  • 1 can of kidney beans (approx. 250 g)

  • 1 can of corn (285 g)

  • 1 Hokkaido pumpkin (approx. 800 g)

  • 4 tbsp oil

  • 2 tsp brown sugar

  • Organo

  • 2 tbsp tomato paste

  • 1 tin diced tomatoes (400 g)

  • Salt pepper

If you like spiciness, the chili pepper should not be missing in a chili.

To do this, halve the pod and cut it into small pieces.

If you want it a little milder, scrape out the seeds beforehand.

Pumpkin chili: delicious fall recipe

  • Peel and finely dice the onions.

    Drain beans and corn in a colander.

  • Wash and halve the squash - no peeling is necessary with Hokkaido.

    Scoop out the seeds with a spoon and finely dice the flesh.

  • Heat the oil in a large saucepan, add the pumpkin cubes and sauté for 3 minutes.

    Add onions, sugar, oregano and tomato paste and continue to sauté for a few minutes.

  • Now stir in the canned tomatoes and simmer over low heat for 40 minutes until the squash is tender.

  • Shortly before the end of the cooking time, add the beans and corn and let them warm up briefly.

    Season with salt and pepper.

  • Delicious with: sour cream dip

    As a dip, mix 200 g sour cream with the zest from an organic lemon.

    Refine with herbs, e.g.

    B. Chives.
