Recipe for potato, mozzarella and fried onion pancakes

Components

  • 3 coarsely grated potatoes and well squeezed from all liquids
  • 1 large onion, coarsely grated and drained from all liquids
  • 1 egg
  • 5 tablespoons grated mozzarella
  • 3 tablespoons store-bought fried onion chips
  • 1 teaspoon salt
  • Ground black pepper to taste
  • 2 heaping tablespoons flour
  • To serve - sour cream

Method of preparation

  • Mix all the ingredients well in a bowl (except for the sour cream). Don't be afraid to process into a pulp.
  • Heat oil about 2 cm high in a wide pan over medium / high flame, preferably a non-stick coating.
  • Using one hand, take a quantity of a ping pong ball from the pancake mixture and flatten with the other hand, slide into the hot oil and fry until the bottom side is well browned, turning sides and continuing to fry for about a minute and a half until browned and transferred immediately to a flat plate lined with absorbent paper.
  • Serve alongside sour cream.
