Asado stew recipe

Components

  • 2 kilos asado strips with and without the bone, sliced into large cubes
  • 1 cup flour (if desired, you can skip flouring)
  • Olive oil
  • 1 coarsely cut white onion
  • 5 carrots cut into coarse circles
  • 1 coarsely cut red pepper
  • 4 stalks of celery washed and diced
  • 8 - 10 (according to size) coarsely cut garlic cloves
  • 1 tablespoon red paprika
  • 1/2 tsp. dry ground hot chili spice
  • 1 tsp. adobo spice or 1 tsp. dry oregano
  • 5 coarsely cut tomatoes
  • 8 coarsely cut potatoes
  • 5 branches of fresh thyme
  • About 1 1/2 tsp. salt (preferably Atlantic, add to taste)
  • 2 glasses of red wine

Method of preparation

  • Flour the cubes of meat on all sides.
  • Heat a wide saucepan and pour olive oil.
  • Place the cubes of meat in a saucepan, sear and close on all sides and remove to a bowl.
  • To the same pot - add onions and lightly searing, then the carrots, then the red pepper and celery. Mars about 10 minutes.
  • Add the garlic, paprika and adobo or oregano spice and continue to sear for about 2-3 more minutes.
  • Return the meat to the saucepan with the vegetables, add the tomatoes and above all place the potatoes and thyme branches. Sprinkle with salt.
  • Pour the 2 glasses of wine, close the pot with a lid and wait about an hour and a half.
  • Open the pot, check with a fork that the potatoes have softened and correct flavors if necessary.
  • Enjoy.
