Thibaut Gamba has the appearance of a good-natured giant.
This 37-year-old from Vosges took charge of the kitchens at Logis de la Cadène in September 2023. His grandmother once worked as a truck driver, he was trained by big names like Jean-Louis Nomicos at Lasserre, Pierre Gagnaire or, in New York, Thomas Keller.
Back in France in 2016, he stayed six years at Clarance, a beautiful restaurant in Old Lille, before taking up residence in Saint-Émilion, in the hotel which belongs to the owners of Château Angélus (yum!), the Boüard family - the rooms are superb.
